Swede Laurentian is by far the most popular rutabaga variety. Grows into globes 12.5-15 cm (5-6’) in diameter with creamy yellow flesh. This cool weather crop is a great storage variety.

Sow directly in the garden as early as the soil can be worked. Plant 2 seeds every 2 inches. Thin to one plant every 2 inches when seedlings are 2 1/2 – 3 inches tall. Sow again in late summer for a fall crop.

Greens are tasty if picked when small and tender. Pull roots when they are 4-6 inches across. Light frost improves flavor, but if roots are left in the ground over winter, mulch heavily.
Preparation Ideas:Â Peel skin, cut into chunks and boil like potatoes. Drain, mash and season with salt and pepper.
