Though the leaves are used as a tasty garnish, Hamburg parsley is grown mainly for its flavorful, creamy white roots. When grown in a well prepared, deep soil free of coarse particles, the tapered roots reach 6-8”/15-20cm long. Serve cooked in soups and stews or grated uncooked then mixed in salads. Cold weather sweetens the flavor of the roots.
